Pasta e Fagioli

Pasta e fagioli – literally, pasta and beans – is a hearty dish made craveable by simple, high-quality ingredients including local ground turkey from Ferndale Market and fresh aromatic vegetables. This is a riff of the classic Italian one-pot dish. It’s perfect for busy weeknight meals! Ground turkey is a tasty alternative to ground beef or ground pork. When purchasing ground meats, look for an optimal lean to fat ratio such as 90/10. The first number (90, in this case) is the percent lean meat, and the second (10) is the percent fat. The lower the percent fat, the leaner the meat and the less saturated fat and calories it contains. If desired, you can further decrease the amount of fat in ground meats by draining extra grease from the pan after browning the meat or blotting cooked meat with a paper towel to absorb extra grease.   • 1 each bunch kale
  • 12 sprig parsley
  • 4 each cloves garlic
  • 2 each cans white beans
  • 2 cup dry macaroni pasta
  • 1 tbsp vegetable broth base
  • 1/4 cup tomato paste
  • 1 pound ground turkey

Tips

  • Hungarian Spice Blend

    Mix up a large batch of the Hungarian spice blend to recreate this recipe at home! It also works well on chicken, tossed with vegetables for roasting, or added to soups and stews.

    1/4 tsp dried rosemary
    1/4 tsp dried thyme
    1/4 tsp crushed fennel seeds
    1/4 tsp marjoram
    1/4 tsp smoked paprika
    1 tsp Hungarian sweet paprika

    Mix well and store in airtight container.

Steps

Mise En Place

Read through entire recipe before getting started. Wash and dry all produce. Peel
and finely dice onions. Chop parsley leaves and stems. Mince or grate garlic. Remove and discard tough stems from kale; then cut leaves into 1” pieces. Dissolve
vegetable broth base in 4 cups water. Drain and rinse white beans. Remove ground turkey from package.

Cook Onions

Heat 2 Tbsp. oil in large pot over medium heat. Add 1 1/2 to 2 cups onions, a pinch of salt and pepper. Cook until soft and browned, 5-7 min. Add garlic; cook 1-2 more min.

Brown Turkey

Increase heat slightly. Add ground turkey and Hungarian spice blend and cook, breaking apart with a spoon, 8-10 min or until cooked through. Add tomato paste, cook 1-2 min.

The USDA recommends cooking ground poultry to an internal temperature 165ºF.

Make Broth

Add vegetable broth and 4 1/2 cups water to the pan; bring to a boil.

Cook Pasta

Add dry macaroni and white beans to boiling broth. Cook until macaroni is al dente, 6-8 min. Carefully stir in kale pieces and mix 1-2 minutes until lightly wilted.

Plate Your Dish

Divide soup between four bowls. Top with parsley. Enjoy!
